he didn't change his gender. Originally he is drinking a potion to stop himself from growing (he said he will stop drinking this after 7 months). Now Deyes gave him a potion to return his body to its normal age but side effect of first potion still lingers so he came back to his younger form.

She was very childish in the past as well so I think not knowing how to grow up properly suits her

It's probably because she's adjusting to her new environment as she became a kid again. The adults did mention that she acts mature for her age. Her past self's attitude comes into play too since it would be weird if they just brush it all off.
