It's not as easy as a simple misunderstanding that can easily be fix with a talk. Yu hon deeply dislikes the priest and the church as a whole because they reing over the royals, specifically his father the king and his brother Il.
Yu hon wanted to do what every single advance nations have done and separate the church from the state striping away their political power.
The priest for his part was not a bad person for what little we were shown, but he also wasn't a good one seeing that he disregarded Yu hon orders of not looking/bothering Yo hins family. That level of dismissal from his part clearly tells that the priest felt HE was above the royal linage and that he could do whatever he wanted in the name of the dragon God.
Now here is the thing when it comes to Yu hons reaction. Did he really had to murder them all? Was execution really the only way? For what purpose did the priest went searching for Yo hins family? Were there any ulterior motives from his part?
The beauty of this narrative is that there is no clear answer.
We will never know what was the priest ulterior motives and what we know is that Yu hon isn't consider a war "hero" for being compassionate. If anything that only shows how thick was Yo hins bubble when she finally realized she married a warrior prince that solved his problems with murder in the battlefield.
By brutally murdering the priests Yu hon was honoring his promise to protect You hins family secret and at the same time becoming estranged with his deeply religious brother and father. And for what little we saw Il still resented both his brother and sister in law for the massacre that happened.

he did it so he would not have any association with the religion because he considered himself superior. He could not say he was keeping a promise by protecting the people when the people themselves were welcoming and accepting. Fact is that the priest recognized them as the higher power and that would overthrow the reign. So he made sure to squash that by first destroying the threat, and second by instilling fear into everyone by burning alive such high authority like the priest and burning children alive. He was no hero. He was power hungry. Because the very castle he resides is called the red (king) castle.
And i do believe he murdered his brothers wife because he found out who she was. But i think that he wanted to kill yona as well after realizing who she was and that is why king il killed him. I believe that king il had principles and stood by them and worshipping the red dragon was how he grew up. I dont think that he murdered his brother in a fit of rage over a dead wife. But i do think that if it was to protect the red dragon AKA his daughter then he would kill him. It goes more with his character. But then again I might be totally wrong

So in this world where ranks and positions are an important part of their society the heir prince of a vast kingdom should no feel slighted when his royal order is ignored? The promise he made was to protect her family's secret about the red king blood, because if you remember most of them where persecuted and killed because of it. He said he was going to protect them, the thing is, he never said *how* he was going to do it.
The family itself might have been welcoming, but that was after the priest went out of his way to seek them out without thinking about the implications that could muster.
At the end there is no right answer because like you said, it was most likely the priest went to them to used them as pawns so the church would gain more political power in the nation; and the prince for his part to avoid that scenario murder all the priests party that knew about the secret. Notice he only killed the church members, he didn't kill her family. So no, it's not because he was power hungry, it was because in his mind, their death was the only way for them to not spreed the secret.
Was it horrible? Yes. Could he had done something less terrible? Oh yes definitely. But what no one seams to grasp is that he is a WARRIOR, when he meet his wife he was returning from a campaign and thus, even if you don't like it, he was consider a "hero" for wining his nation war battles.
Now the question in the air is if the prince murders Yonas mother. If I recall correctly, on a flashback of the main characters as children, So Woon is talking fondly of his father who is a warrior winning battles for king Il. And then supposely he insurrected and was put to death because of treason. I don't recall but by then I believe Yonas mother has already pass away.
If anything I believe the insurrection was because he found out that Yona was the reincarnation of the red king, and him hating the dragon religion decided that he didn't want humans being reing over by a mythical creature again.

If he was performing his role then so was the church which had been in place long before he was even born. The kingdom he was such a hero of ,to some, was created by the the red dragon king. The church and his blood relatives were his legacy so if he was acting within his right as the rightful heir so was the priest. You say he wanted to manipulate them, i say he wanted to give them their rightful place. And that made him threatening. You say the prince was a hero, to some he might have been. But to others he definitely was not. The winner always gets to write history and portray himself as the protecter and the righteous. The oracle was one of those children, dont forget what he said.
Im not saying king il did a better job, hell no. But i believe that he didn't kill his brother until the brother threatened yona, not just as his daughter, but as the red dragon
