Although, I am a little confused, did Koji manage to escape jail? And if he did, is it because of the doctor? (Happy that he died though).

From what I remember reading, this is the cover of the volume that as published just after the major earthquake/tsunami/Fukishima Plant meltdown in 2011 - and - yes it is Asami and Akihito (dressed as rescuers)

It really is. Why does Aki have angel wings strapped on it? Is it symbolic or something? And are there any unusual covers like this one?
Aki is shown with one wing on the cover of volume three, which is actually titled One Wing in the Viewfinder. There's another illustration of him with two white wings where he's holding an arrow pointed at Asami's heart. I couldn't find the full illustration on this site. Part of it is used as the cover of the Finder Character Book, but you can't see the wings. So yeah, I think it's symbolic as to how Yamane Ayano views Aki's role in the story.

His mother suddenly collapses and the next is surgery? Were there no serious symptoms beforehand? She did hid it but still... and the doctor quickly diagnosed the disease....seemed so rushed but the manga is still good.
Acute appendicitis with peritonitis is a life threatening situation. The fact that there was already peritonitis meant that her appendix has already ruptured.
So the management for that would only be surgery.If you wait longer,she will surely die of shock.
