Uncle disappearing after being mutated could indicate towo things
1st, he actually got mutated after the arrival of the scientist so maybe it was him who injected uncle with something that turned him that way.
2nd, he didn't wanna be exploited by the company, he MIGHT be considered 'good product ' so he might be taken to a different farm and be treated like a stock but it's so unlikely because I doubt he'll leave the people in the farm and escape by himself, uncle doesn't seem like a coward

I definitely think that it’s a mix of both. If a human got turned into an animal, they still have the majority of their human characteristics. Fluffy who used to be a dog first, and then got turn into a human still has most if not all of his dog characteristics he just stands on 2 legs now.
