They're shown as being obedient and somewhat inhuman, almost without emotion, and they're definitely conditioned into thinking they serve humanity (or it could be potentially a side effect of having the genetics of the angel that came to save humanity/an inborn desire to protect humans),
You should probbly go back and read the bank scene bc Adam explicitly says "the moment an organism exhibits aggression towards him" Eve will retaliate using his powers, no humans were hurt except for Eve himself. However they did attempt to hurt Adam, which is implied to be what caused Eve to use his powers.
Given that two things have been established here explicitly: that Eve will defend Adam by using his powers, and that Eve will defend himself using his powers, there's a possibility that he could have hurt the guide for hurting him. And IF that guide fights back/hurts Adam, Eve could possibly attempt to use his powers again. I'm not saying that definitely will happen, it's just an interesting supposition based on previous established canon.
The fact that this guide is so abhorrent seems to be making a point, though because the scene isn't finished yet, we can't be sure what the point is (other than the obvious: that only Adam can guide Eve).
Yes the moment an organism exhibits aggression towards him but not humans. Bc this would be opposing the protecting all humans thing they have going on. They're brainwashed into this selfless act, it is not biological for them but they can't directly act against a hyman if that human is not directly harming others. In the bank chapter Eve's trigger was him asking adam if those "humans" were like those fake angels from the gates that were harming people. That's what sets him off not them being violent towards adam.
I think the creator took the easy way out on the current scene though bc sure eve doesn't wanna be guided by anyone else but would he be so reluctant if the guide was a kind reassuring dude and not this little cunt?

But Eve isn't stupid, he's shown to pick things up very quickly (like with kissing; Adam only showed him once and he picked it up immediately) so it's possible that he could start to equate any human deemed to be an active danger to a Reaper (I hadn't picked that up tho, that's a good catch), and physically assaulting someone def falls under that category.
However, the author prolly wanted to show how subservient and sympathetic Eve is in this scene and that's why they didn't have Eve defend himself, it's just a little bit of an odd choice to me given his other character traits. (regarding my other theory, it could also be that Eve didn't fight back on purpose bc he knows Adam will come to his defense/find him sympathetic, but that's all very very theoretical til we get further in the story)
I def agree that so far that addressing how different guides react to Eve could have been done a lot better than just the expected abuse. They were probably trying to reinforce that no one but Adam sees him as human, but I think that dead horse has been beaten and the author should prolly find another aspect of this world to put lore into lol

I don't think eve is stupid rather than innocent and passive when it comes to day to day life. About the kissing part tho i think this isn't about him being smart or dumb bc eve needs guiding and Adam had mentioned that guides from Eve's generation instinctively know how to make their guide feel good during sex so i think the whole kissing/sexual part is more of an instinct rather than a sign of his intelligence.
I just think he didn't defend himself bc he isn't supposed to harm humans and that person was being a threat only to him not to a normal human in general,,, maybe now that adam is involved he will react.
About your theory that he's doing it on purpose etc it is a possibility but personally I wouldn't like that route bc I don't want eve to be some secret manipulative mastermind bc the series was not advertised as such,,, i prefer him as his current self cute but with a manic edge that surfaces sometimes.
And for the last one i agree like the author has showed many times how people can be mean to espers bc they don't see them as equals/humans,,, I'd rather Eve's realization that he doesn't wanna get guided by someone who isn't adam came in a way that didn't feel forced,,,
