Main lead's body is affected by the dark spirits blessings so he looks more like him,. When she was blessed by the light spirit her skin changed not her hair. It still stayed black to show her original blessings. Plus I bet she was supposed to be fair skinned anyway if it weren't for her blessings.
The story wasn't even about racism it was discrimination over her blessings being from the "most dangerous" spirit King. People thought if they angered her the entire city would plummet into darkness and actively stayed away from her.
