So this scene here, it seems like Shirayuki apparently roasted the Yuuha guy, but I don't see how her response to his bitchy ass comment is a good comeback? Someone explain please?

It's because she's looking for the prince. Basically since she's close to the prince and if he insulted her, she could tell Zen to punish him if she wanted to since she knew Zen. It's a very good comeback because you know who's is who's status, and with the right person it'll shut them up real quick lest they want to be punished.

It's because he told her to lie on a bed and wait for the person she was looking for. He said it to insult her, but she said she was looking for Zen, which made it clear that by saying that Yuuha had also insulted and disrespected the prince too in the public, whom should've been respected by everyone. It's a clever comeback, actually :))

Did Nezuko regress in her mental age? Before she turned into an Oni, she seemed more "mature" but now it's like she's a 5 year old kid

I wonder if it's an unwanted side-effect of the author exaggerating Nezuko's body language/attitude because she can't talk? (and also for comedic effect)
or maybe the author didn't have a good feeling of the character at first and has decided to change things a bit so she'd feel more like a little sister...?

I think the author wanted to emphasize the fact she's no longer human, as well as not a 'typical' Oni. If she was an Oni that could talk normally, that would take a lot of the emphasis away from her, as all the other Oni that we've encountered so far could converse perfectly normally. And it creates more mystery surrounding her, which works perfectly with how she's just so... unnaturally strong compared to the other Oni, with possible new abilities and powers popping up here and there. I don't think it has much to do with portraying her as an immature little sister or of a regressed mental age.

I did notice she's strangely strong. I wonder if the villain's blood (i forgot his/her name) is very compatible with her? Because it seemed like when he/she injects it in some people, they get deformed and die, like a rejection.

Yes, his eyes glowing does mean he's got a power. There was a power ranking board earlier in the story, and some people were thinking he would be put in the empty second place spot behind Serafina. I'm guessing he disguised himself because of his past and the green haired girl we keep seeing. I'm also guessing that UnOrdinary has a place in the reason, but I'm not sure how.

Not really sure about that. He could've possibly thought the level of bullying would be lower, but that wouldn't make sense. He would've known that it'd be higher based on who goes there. At the same time, we don't know the environment of the last school. For all we know, it could be even worse than the one he goes to now.
Honestly though, i NEVER expected the blonde girl with glasses to go after the crazy bitch with short orangey hair and bangs. Like, this has to be THE MOST unexpected thing ever - considering most mangas you can pretty much predict
