I’m assuming that she pretended to be a guy for the inheritance, but she was ultimately cut off. Why continue to pretend to be a guy?

Perhaps to make the mother not feel ashamed? The fact that the mother lied about the gender of her child to the father for money would probably cause her to get a lot of hate from external and internal sources. So maybe it would just be better to continue living as a man and telling only a few people of her true gender than to be humiliated and isolated by society? Although we see the women as the victims, ultimately the father would be seen as the true victim in newspapers and rumors ext.

Fu Jiu uses her new identity to begin her old work as a hacker, however, it is common knowledge to Qin Mo (who used to hunt her formal self with the international police) that the original hacker, Z, is a woman.
She keeps pretending to be a man to create distance from her past persona as well as from Qin Mo. As their relationship develops she believes that she will always want to stay with him and that he will do whatever it takes to keep her if he knows she is a girl.
Fu Jiu however does important work in the gray areas of the law to gain justice for the underdogs of the world through her hacking. While Qin Mo is a former consultant for the international police and believes that even though Z has good motives the ends do not justify the means. Fu Jiu believes that if Qin Mo finds out what she does in her spare time he will try to reform her and failing that (which she knows he will), arrest her.
Having a super straight guy having to overcome what he believes to be an aberrant sexual desire creates a shield. Though honestly not a very good one. He eventually says screw it to caring what the world thinks and begins to actively seduce Fu Jiu into "becoming gay".
When he does find out that she is a girl and the relationship develops in that direction the world just thinks they are gay for a while.
If you want a better answer than that you will need to read the novel.
Personally I also never thought there was much reason to continue pretending to be a guy. It just makes more and more trouble for everyone and there is never a lot of exposition on why Fu Jiu's mother thought that disguising her daughter as her son was a good idea.
It can, however, be inferred that it has to do with the mistress having a son as well as the financial status of the Fu's company as the time of the kid's birth. Fu Jiu and her half-siblings are only a couple of months apart and had Fu Jiu's mother had a divorce and her father married the mistress, when Fu Jiu was just born he would then have become the illegitimate child.

Sure, it’s got a lot of the same cliches. Bad lady gets a redo and doesn’t think she the ML will ever love her, instead going for the girl he fell for the first time. But I like how DARK this whole thing is. Yeah, there’s usually a death involved, but this woman had her tongue and limbs cut off then made herself into a human sacrifices. She’s not simply cold, but numb from all the abuse. It’s not, “Yay, I’m gonna live on and be happy despite it all!” She’s just so TIRED of all she’s been through. This is all so dark, and I love it.
Most of all, I find this to be an interesting ethical dilemma. Woman is responsible for COUNTLESS deaths and a corrupt empire. Absolute bloodbath. She is tortured, gets her limbs and tongue cut off. She sacrifices herself in a blood ritual to go in the past, expecting to be gone for good. She survives and wants to make sure things go down a different path. For what exact reason, I’m unsure. She still thinks herself an awful person. Can she ever be redeemed?

Please remember these are all Asian mangas we're reading thus technically even though they look white most of our characters are actually asian, that's just the state of things, secondly, unlike much of the rest of the world Korea/Japan/China etc do not have a very multicultural community thus are not generally going to cater to such, it's not a racism thing it's just reality, when almost 99% of your population is generally one race you are going to most likely cater to that.

It's called colorism and it's super prevalent in Asian culture. Also racism does exist in places like Korea against Chinese, Indian, and other Asian nationalities lol. Korean comedy shows still use blackface and cultural appropriation as funny gags regularly. Just because YOU don't personally see it doesn't mean it doesn't exist.
