With "Please Throw Me Away" you need a lot of patient with the story and MC because it takes very much a lot of time for her to get more radical with a real spark of anger.
I am not fond of "Beware of the Red Thread" because MC gets easily overpowered and literally kidnapped.

I don't get her logic of not securing any rewards, titles or money for being a war hero.
She is way too modest and humble.
I get that she is a good natured person and feels guilty about the people she had killed during the war but refusing any given resources makes her an easy target by any rich influencial assholes.

I think she is just a very humble person and quite selfless (which is kinda rare nowdays). Like you mentioned, her guilt of killing thousands is a bit weight on her shoulder and I think she only wanted to live in a small house with her brother. She also probably didn’t know a ton about how greedy and gross some of the nobles were because she was away at war for so long (like she didn’t even know that her brother was working and their “parents” was using her money for themselves). She technically did recieve some money, but having to take care of a title, land and a large mansion was probably a burden for her too.
Look, she wants to amend her sins, she doesnt wants those things like title nor money because taking countless amount of life is much more valuable so she feels guilty.

It wasn’t like that at first they did care for her at first and trusted her which was why she was given the culinary job and had a whole kitchen built only for her... they said chef had more power in the household......

First she doesn’t live in the main house so the brothers and grandfather did not know she was abused. They thought she just threw tantrums for attention
Second they didn’t abuse her it was the maids and stepmom and they hid it from the other family members.
Third because she was bullied by the step mom she believed the others where evil as well so she threw tantrums and never accepted them the reason why the grandfather and two brothers didn’t like was because when she threw tantrum she was violent to others and herself. And they trusted her with a huge responsibility but she kept making mistakes, they said the responsibility that the grandfather entrusted to her would have been very important and given her a lot of power but she betrayed their trust in her at the same time she didn’t accept them as family members... they didn’t know why she kept acting out when they did they felt guilty and tried to make it up and protected her even more.....
Example the blue haired brother was physically and emotionally hurt by her on his 13th bday: she threw a teacup at his head and it shattered I guess he was trying to make friends with her but she pushed him away by hurting him which scarred him emotionally so he never tried to get close to her again. And because she was always violent with other she was moved out of the main house
Throwing a teacup at my head would definitely make me not like a person, i can definitely see why the blue haired boy likes her food he still doesn't really like her. I think proof her older brother liked her was that he would have easily pet her but how he reacted shows in the passed she reacted negatively to it , likely reacting harshly to the sudden contact. The grandfather started treating her better when she clarified she was depressed and abused by the step mom and when she began to use her wit.
Totally not JUST because of she is happier and can cook but more like in their eyes she is maturing and becoming more responsible. If you speed read it, it can really come off as they were neglecful, as you are more prone to look over details!

I am someone who suffers mental illness and I come from a family that can't handle mental health issues at all. And it didn't help that my own family demanded to be their ideal Chinese son that can make them proud... I left that toxic family to save myself. That is why I feel strongly against the family.
I ve re-read chapter 1, 2, 11 and 12 and I do not have any sympathy for the whole family! They didn't suffer like the OGHost and her biological mother. They only care for her as long she is useful and bring honor/prestige to the clan. They starting to like/respect her after the younger sister suddenly does not display anymore mental health issues, shows strenght and brings beneficial results. The grandfather and blond brother cleary sees her as a tool! The blue haired brother gets interested in her because of her cooking skills.

I do agree to some of your points. Some of your counter arguments do make sense to this messy family situation.
Fact is that the MC who took over the OGHost is the one who solved most of the problems and who unintentionally get their family love.
Her open friendly attitude may have helped open doors to the heart of the males but without her cooking skills and being acting cute they wouldn't have given her a time of their day.
The OGHost has been always in a disadvantaged position since birth not knowing how to handle any situations. Didn't her issues already started before the arrival of her stepmother?
You can also understand why there readers would rather side with the OGHost and resent the male family members for initially seeing her just as a brat and tool.
Her Maid is the one who truly stood by her.
In the raws they started to get more empathetic and protective after seeing her bruises while she is unconcious.
